How do I get the spell checker dialog to appear?
To open the spell checker dialog window, use the “ABC” button on windows where it is available. The spell checker window only opens if it encounters a mis-spelled word, so you may need to temporarily misspell a word to get it to open.
How can I backup my spell check user dictionary? It is not in my NYC user folder so File… Backup… does not save it.
Spell check dictionaries are stored
in your NYC \maindicts folder. Using
File… Explorer…, copy “userdic.tlx” and
“correct.tlx” from your system folder to your NYC user folder just
before you use File... Backup… When you restore these files, you will
need to also manually copy them from your NYC user folder to your system
folder.

I selected
Swedish for the spelling checker language, but I cannot see it affecting the
result in any way. How does the spelling checker work? How should I check that
it works?
Now when you spell-check a recipe, and a misspelled word is found (according to the Swedish wordlist), the candidate words for changing the misspelled word are in Swedish. These show in the list on the spell check window when a misspelled word is found.

Try unchecking "case sensitive" in the spell check options (Tools... Options... Spell Check... Configure...).
